In various Hindu scriptures, it is mentioned that Goddess Parvati was the mother of lord Ganesha as she created Lord Ganesha by using turmeric paste to make an idol, then she breathed life in to that idol.
Since Goddess Parvati is also known as the Shakti [ Power ], she created Lord Ganesha by only using her own energy.
According to various Hindu scriptures, when Goddess Parvati had created the Lord Ganesha, he had a human face but there is a story behind his elephant like face.
After creating Lord Ganesha, Goddess Parvati went for the bath and she ordered her son (Ganesha) to guard her entrance outside and guard her, and not allow anyone to enter.
Then Lord Shiva, who had gone out, came to meet his wife Goddess Parvati and saw the sentinel standing at the gate.
Because Lord Shiva did not know that Goddess Parvati had originated Ganesha only because of her desire to have a son.
That is why he asked Ganesha to move away from the front of the doorway but since his mother had instructed Ganesha not to let anyone in.
And since Lord Ganesha did not even know that Lord Shiva is his mother's husband and his father, therefore he started to challenge him to fight.
Ganesha was small in age, but because Goddess Parvati had emanated Ganesha with her power, Lord Ganesha was giving equal competition to the Lord Shiva in the war.
Finally, Lord Shiva got angry and cut Ganesha's head with his trident. Mother Parvati also came out with the sound of war and she became angry when she saw the severed head of her son Ganesh.
She took the form of Mother Kali and she agreed to destroy this world. Seeing this form of her, all the gods got scared and he prayed to Lord Shiva that however he make Ganesha alive at any cost.
Lord Shiva asked Lord Vishnu to go to the earth and cut off the head of that creatures child who had slept in the opposite direction from her child.
After searching all over the world, Lord Vishnu found the elephant as the only creature which sleeps in opposite direction from his offspring.
Then Lord Vishnu cut the head of the elephant's baby as per the instructions of Lord Shiva and he handed over the cut elephant's head to Shiva.
Then Lord Shiva added that essence to the torso of Ganesha and put his life in it. That is why he is also known as Gajanan.
